Plastic-free berry chocolate covered almonds

These berry dusted chocolate covered almonds are a great snack because the ingredients can all be found without plastic packaging. You can buy the almonds in bulk at most grocery or health food stores that let you bring your own reusable containers. Many chocolate bars have plastic-free packaging, usually wrapped in aluminum or paper. Coconut oil is sold in reusable glass jars. And berries or any type of fruit can be found without plastic packaging at your local farmer's market.
Plastic-free berry chocolate covered almonds
Ingredients
2 cups of dry-roasted almonds
8 oz of chocolate (chopped)
2 tbsp Coconut oil
1 cup of berries
Directions
Berry Dust:
If using an oven preheat to 200°F and line a baking sheet with parchment paper.
Rinse the fruit. Then cut into thin slices depending on the type of berry you are using. Lay the berries onto the baking sheet in an even layer. Dry for 4-8 hours until completely dry, checking on them every so often.
If you are using a dehydrator If you are using a dehydrator lay the berries on the dehydrator trays and put them in the dehydrator. Apply the “fruit” setting on your dehydrator if there is one or set the temperature to 145°F. Most fruit require 6-18 hours of drying to be completely dry.
Once completely dry and cooled, put the berries in a food processor or blender and pulse until they are a fine powder.
Chocolate Covered Almonds:
Line a baking sheet with parchment and set aside.
In a sauce pan melt together the chopped chocolate and coconut oil over medium heat. Stir until all of the chocolate has melted. Remove from heat and stir in the almonds until completely coated
Transfer the chocolate covered almond to the baking sheet, spreading them out into an even layer. Generously coat or sprinkle with berry dust.
Put the baking sheet into the freezer for 30 minutes to 1 hour to set. Store in an air tight container in the freezer or fridge.
